When sending mail, I want to avoid including addressees' e-mail addresses and
show their names only -- for security reasons. But I can't find a tool to let
me exclude them.

Will not Bcc: work for you?

If you exclude the email addresses, the email won't arrive. Outlook
Express,
but not Windows Mail, allows you to hide them but not remove them.
However, in Windows Mail, you can start a new message window, click
on View, then All Headers in the new message window, and put the
addressee's addresses on the Bcc: line, and the copy of the mail they get
will include only their own address and not that of any other addressees.
Some email servers, though, have problems with mail having no addresses
on the To: line; you can handle this by putting your own address on the
To: line and therefore send yourself a copy as well.
