Adding fields to an email

I am new to any programming with Outlook. I have a need to
ad some user defined fields to my email. Information
like 'Item Number', 'Payment', 'Payment Date','Shipped'
and so on. I can do this manually but with the volume of
email this takes hours. How can I do this through an
automated process? preferrably select the emails i wish to
convert from a view and run it on them
