PC2700. Just go to the website of the motherboard manufacturer you are
going to use, and see what they recommend.

If you plan on using 3 sticks of DDR, then get the PC2700. This is not a
Dual Channel chipset (the 754 cpus), so you can use either one or two DDR
sticks of PC3200 or higher. Only some of the really new socket 754 boards
can run three sticks at the full 400mhz (PC3200) speed.
