When I reply to a message my signature is always prefixed with >

How can I remove this ?

The settings above that, where it says "When Replying to a Message" you
probably have it set to "Include Original Message text", yes? You might try
changing it to Prefix Each Line, then you should be able to delete the ">"
from the field below, and then change the When Replying to a Message option
back to whatever it was before.
