I want one large drive, can I use 1 SATA on my A7V600 without going to the
RAID function or are the SATA bound fot RAID? Should I just go for the 250
ATA for 250?

I just put together an Abit machine with mixed SATA (not RAID) and regular
parallel IDE drives. It works fine, but the BIOS was a little tricky to
configure.

Go for the SATA drive. The A7V600 can use it in non-RAID mode.
SATA is becoming the new standard drive interface and they
don't cost much more $$$ than an ATA one.
