Hello,

Unfortunately I installed a second 2000 professional OS
to my drive. Is there a way I can delete this OS
while keeping my functioning day to day OS intact?

Thanks

Yes.
Boot the first OS.
Delete the folder that the 2nd OS is installed in.
Open a CMD prompt. Type
attrib -r -s -h c:\boot.ini
edit boot.ini in notepad.
delete the entry for the 2nd OS.
save the boot.ini file
type
attrib +r +s +h c:\boot.ini
