Writing New Mail - Deleted Contacts continue to show as prompts...

I have cleared hundreds of obsolete contact addresses from my contacts file.
When typing the beginnings of an email contact, the deleted items are still
coming up as options therefore the choice becomes totally manual...

How do I get rid of the deleted information and stop it from showing as
possible options when writing new mail?

You failed to provide your Outlook version.
Assuming it is a version that supports autocompletion, the autocompletion
cache is where those entries are stored. It has nothing to do with your
Contacts Folder.
You can remove individual addresses from the autocompletion cache by
highlighting the entry when presented in the suggested names list (use your
arrow key to migrate to the entry) and then hitting your Delete key before
you tab out of the field. To clear the entire cache, follow the instructions
here:
