Does anyone have the real answer on what services on a server that you
should disable, set to manual, or leave auto?

I am working on 2 servers,
a regular windows app server on the internal net and then a web server
running citrix nfuse 2.0

you want to know.

As a caution: I once pruned my services to the max, managed not to blow
anything up, didn't notice any performance improvement, and decided to let
Windows 2000 manage its own services. Messing with services is like messing
with the registry. You can never be too cautious.

However, that said, many services are completely unnecessary.

I found that one, I wasn't sure what the safe settings were because I found
a "harden win2k" document and it conflicts so I was wondering if anyone has
a box running well or a best practice doc they have used before.

Just as there is no registry best practices, there is no services best
practices. In his web page, Black Viper gives the best practices he knows
of, such as shutting off only a few services at a time so you can recover
easier it they cause problems.

This is arcane, black art stuff, sir.
