Tasks - Making High Priority the Default

Is there any way to make the Task Priority the default rather than Normal
Priority.

I want to have to change it to Normal or Low for some but require all others
to be High - and would like it to be the default.

Any ideas will be appreciated

You can change the default in Tools-> Options-> tab Preferences-> button
E-mail Options-> button Advanced E-mail Options...
However this will change the default for all the messages (so not just
tasks) that you send.
