Outlook Tasks - priority

I know that I can assign a task as Low, Mediu or High priority, but this is
not enough. I think we need another field where by you can assign it a
number, so even if i have 5 high priority things, they will be numbered in
the order i need to do them.

I should also be able to change a number, and the changes propogate to other
tasks.

You would need to create your own custom field to hold that information.
