I want to use smileys not the graphics that Word wants to convert them into.
What setting do I need to change so that the "old-fashioned" smileys remain
as I typed them?

Delete the autocorrect entries that convert them.

As Graham says, you can delete the AutoCorrect entries that generate them
(they're right at the top of the AutoCorrect list), but if you think you
might ever want to use them, you can also press Ctrl+Z (Undo) immediately to
reverse the "correction."
