Profile Editor - Bit Rate For DVD

I am capturing some analog video using MM2 and as we know you cannot capture DV-AVI from analog. So I thought I'd try my luck with the profile editor and make a custom profile but I'm not sure what to use for bit rate and some of the other settings - "Allow non square pixels"

I just have some nice Tour de France footage I'd like to save. I bought Pinnacle Studio 8 for this but the software crashes so often on my machine (new high end, XP) I can't even use it. What a shame. Maybe Pinnacle 9 will be better.

Anyway MM2 looks so nice it would be great to just use it. I don't have a DV camera to first play my analog to

I suggest the canned 2.1 Mbps (NTSC or PAL) for capture... I'm doing an
analog capture right now using the 2.1 Mbps NTSC option.

I don't have that option? I am talking about creating a new profile with the profile editor
