Does anyone know how to prevent users from saving
executable file types using group policy?

Hello cjp!

if you are running Windows Server 2003

take a look at Software Restriction Policies in Windows Server 2003

Software restriction policies do not prevent users from *saving*
executables. NTFS permissions also do not prevent saving of specific
file types if the user has write permissions to a directory. However,
SAFER *can* prevent the executables from being run.

There is a way, But you have to use some kind of proxy server then, like
Microsoft ISA Server.
