Outlook Data Transfer

I am currently using an exchange server to store all my mail and contact
data. The plan is to migrate away from Exchange and use internet email with a
personal folder for each user and system. How do I make sure not to lose
data, (i.e. contacts, sent items, inbox, calender etc.) when deleting the
exchange profile?
