Outlook 2007 Tasks, Categories, Can I reate a new category & name

I have a lot of tasks that I want to be able to group into "Projects"

The closest thing I can find in Outlook is Categories, but these appear to
only be ways to group the task by colors, and I don't seem to be able to add
to them or rename them. i.e. Blue Categroy is pretty meaning meaningless.

Is there any way I could create a new category name it after a project that
I am working on?

Click the Categorize button, and then "All categories". In that dialog you
may rename or create new categories.
