Is there way to highlight text in an email in Outlook 2003?

Is there a way to highlight text (in yellow) in an email message using
Outlook 2003? I could do it in earlier versions, but cannot in Outlook 2003

Were you using Word as your email editor previously? Not sure if that's a
intrinsic Outlook function not functionality of Word.
