iPod audiobook file creation

I have ripped a multi-CD audiobook, which has created a folder for each disk
containing a clutch of mp3 files.
The folders and files have automatically been named appropriately by the
ripping pgm and when burned to a R/W DVD disc they play in the correct order
in my Video DVD player which has MP3 facility.
I want to create a single .m4b file from the folders/files so that it will
play correctly as an audiobook in my iPod.
I have found a program that will combine and convert individual mp3 files to
a single .m4b, but it has no facility to point it at either the mother
folder, or even the individual daughter folders as a list.
It would be quite impractical to have to enter/select each individual mp3
file as there are far to many.
I expect that others have come across this issue and can suggest a practical
solution/program/application.

Why not just create a playlist for the audionook and add all the
audiobook's mp3 files to it in the correct order. I've done that myself
several times.
