IE Tracking

Is there any way to see if someone has visited a specific website,
other than checking their history in the IE dropdown or viewing their
cookies??

We have a user who claims they visited a training website on such and
such a date to take a mandatory training, and that the site just
didn't record them accessing it. I am being asked to check their
computer and find out if they indeed visited the site, and if so, on
what day.

Any thoughts?
