HTML format default setting when reply to or forward emails

When I write a new message, I always can choose the fonts type and color,
etc.
When I reply to or forward to SOME of the emails, I can't change the font
and color. I have to manually change to HTML format inorder to change font.
Why is it not all in HTML format?

I would like to be able to vary my fonts by default when I reply or forward
any email. Can it be done? Pls help.

Because Outlook is smart enough to respond in the same format as the
original message. If someone sends you a plain text message, chances are
they do NOT want to receive an HTML response.

What are the differences between 'HTML' & 'Rich text' format?
In the file menu, under 'Format',
when compose new mail i got "Plain text" & "HTML" options. When reply to or
forward mails, some have the options "Plain Text" & "HTML" options & some
have "Plain text" & Rich Text" options. Why is it so?

Rich Text format messages can only be read by Outlook. If you send a Rich
Text message to someone who does not use Outlook, they will receive your
message with a .dat extension, which they will not be able to read. In
general, Rich Text format should only be used on a system that is working
with an Exchange server and the messages are only being sent to other
Exchange server users.
