In outlook 2003 I used to be able to print an e-mail message without the
headings (To, From, Date, Subject), but I can't seem to find how to do in
Outlook 2007. Please help me with a clear path to folllow.

Open the message, click Other Actions>View in Browser and print from there.
I don't think that will show the headers (but I can't test it right now).
