How to filter categories I don't want to print on calendar

I understand how to use filters to select categories I want to print on my
Outlook calendar. But, is there a way to select categories that I DON'T want
to print (i.e., birthdays)? Alternatively, is there a way that each time I
make a new appointment it is autimatically assigned to a default group?

On the filter dialog don't use the second but the third tab. From the field
chooser select Categories and either the condition "contains not" or "equals
not".
