How do I save a RGB custom colour for use in text and shading?

I would like to be able to save custom RGB colours to the colour palette to
use for text and shading. At the moment I have to enter the RGB reference in
each time. I know that a paragraph or character style can be created for
text but what can I do about shading?

Either kind of style can include shading as well as text color. In the New
Style or Modify Style dialog, click the Format button and select Border to
open the Borders and Shading dialog.
