How do I get rid of formatting symbols in outgoing emails

Symbols representing space, returns etc have suddently commenced appearing in
my outgoing emails - very annoying!! How do I get rid of them?

Thanks heaps Pat - you are my saviour!! The symbols were very distracting!!
