Filing Outlook Mail under jobs not Users

I have a customer who has 5 or 6 architectural jobs running at any time and
up to 5 users sending and reciving emails regarding these jobs.
There first thought was could the files be saved as shareable PST files in
job folders, but that is not possible, so my question is:
Using Exchange can mail account be set up for each job and the mail be
distributed to multiple users within the company but saved in the mail folder
for that job?
This would save a huge amount of time filing as they are currently having to
file around 1500 messges a day

How about creating a mail-enabled public folder for each job? The sender can then cc: that folder.
