Symbols are showing up in emails I type. I have tried everything to return
to normal!

Since you have already tried "everything", what else can we suggest?

Especially since you don't give any information:
- Outlook version?
- account type (POP/SMTP, IMAP, Exchange?
- message type (Plain Text, HTML, RTF)?
- email editor (Outlook or Word)?
