DHCP subnet mask

I use the address range 10.0.1.1 - 10.0.199.254 in my
scope. The subnet mask on the DHCP server options and on
the clients gets set automatically to 255.0.0.0. My
servers use static IP addressing and a subnet mask of
255.255.0.0. How can I change the DHCP subnet mask to
also use 255.255.0.0? It doesn't seem to be causing any
problems, but it has changed within the last week, and I
don't know how or why.

The mask is set when the scope is defined. You'll need to recreate your
scope. If your network is limited to just this one segment, then you
should be OK as is, but if you actually need to talk to any machine
outside of your true segment, it will fail because the machines won't
know to send the IP's to the gateway.
