how do you change the colour of emails from different people?people?

You can try to use Automatic Formatting. Right click in a message view,
choose Customize Current View then Automatic Formatting. You can use all
sorts of criteria to set the font for different items in a view.

You can also use the Rules Wizard to assign different colored flags to mail
items based on criteria
