Bullets in Smart Art

I'm using PowerPoint 2007 and created a SmartArt graphic, the vertical
Chevron list. When going to a second level (and below) in the text box, it
creates bullets next to the text in the graphic.

Is there a way to either remove the bullets or change the bullet style? The
bullet option on the Home tab is greyed out.

Bullet styles of SmartArts are fixed in the GLOX-(XML-)SmartArt-Template. If
you know how to write XML code, you can create your own modified
SmartArt-Template. If not, you could complete the whole graphic, then
ungroup it (which has become easier with SP2), then change the bullet style.
