Anonymous forms

When sending a form created from Frontpage, the form is sent by the server
with the default address: (e-mail address removed).

How can you modify the "anonymous" to reflect the sender's email address
instead of the servers default address?

You can't. The form is not sent from the visitor's email but is
processed through your form. You can ask for an email address as a
required field in your form. Even that will not guarantee the email
address filled in is truthful or correct.

As already mentioned, you can't with the standard form.
You can however create a field for the email address and then in form properties set the email field as the reply to
address.
Then when you click reply to the email the senders email address will automatically populate the To: field in your email
client.
