adobe to word editing

I brought a document from adobe to word but now I can't edit the document in
word. I've tried saving it as a few different files, word, rich text, etc...
but I can't put my cursor into the document for editing. Probably something
simple that I'm overlooking.

'Brought'? Word cannot edit PDF files. It can display single page PDFs as
objects. You would need to convert the file to Word format.

I do have the entire document in front of me in Word. As an aside when I
converted it from PDF a blank page was inserted every other page?

Most likely, when you "brought" the document over to Word it was as an image.
In Adobe, have you tried to use Microsoft Office Document Image Writer in the
print function? It has an OCR function that can convert the image to text.

If you have converted the file using Acrobat to Word format, and you are
unable to edit that in Word, then the probable reason is that the PDF was
made from a graphical representation of the original document i.e. each page
was converted to a graphic first - the intention being to inhibit editing.
The way around this is to use OCR software to convert the PDF, or possibly
use one of the PDF conversion utilities such as PDF2Text.
