yes/no field triple-state in a table

Consider using an Option Group and not seting either as
the default. They'll both be grayed out until either is
selected.

You would add a field to your table and call it Yes/No
and its datatype would be Number. See what Microsoft did
in the NorthWinds Orders Table for the "ShipVia" field,
except you would do a Yes and a No.
