XP - Task Manager - Processes

I have experienced several performance problems with my laptop. I have used
adaware and spybot and it seems to have improved. A question I have is when
I go into task manager and processes I have 51 of them running. Some I know
are system processes but there are a lot that appear not to be. How can I
tell and where can I go to find the root of the problem and delete whatever
task is starting them?
