From what i can gather a global catalog DC on holds a readable copy of the AD partions
Does that mean if you stop it from being a global catalogue server then its copy of AD becomes writable again and it will not be queried only for Authentification?

WHen you enable a DC to become a GC, it will then hold a read only copy of
all cetain attributes (not all) from the whole forest, such as simple
attributes: username, UPN, email address, etc. Being a DC, it will still
hold a writable copy of it's own physical AD database. Being a GC is just a
service that runs on a DC.
