Working in Word 2007 - Need to Protect Document in Compatibility M

I'm working in Word 2007, but I need to create a form that's protected for
users in older versions of Word. I'm working in compatibility mode and I've
inserted text boxes using legacy tools, but am unable to figure how to
protect the document against changes. Can anyone help me on this?

If you've used the legacy tools, then you must have the Developer ribbon
displayed. The Protect Document button is farther to the right on that
ribbon, and there's another copy of the same button on the Review ribbon.

When you click the button and select Restrict Formatting and Editing, the
Protect Document task pane opens. Check the box for Editing Restrictions,
and set the dropdown to "Filling in forms". Click the Start Enforcing
Protection button; enter a password if you want one, or leave it blank; and
click OK.

You can also add the old Forms toolbar's Lock icon to the Quick Access
Toolbar. In the Office button > Word options > Customize dialog, choose the
category Commands Not In the Ribbon, select the Lock item, and click the Add
button.
