Make a copy of the document, using Save As. In the copy, use Edit >
Replace to replace "and" with nothing (that is, leave the Replace box
empty and click the Replace All button). Then replace "the" with
nothing. Do a word count. Then throw away the copy and reopen the
original document.

Alternatively, just replace "and" with itself and note the number of
replacements. Do the same thing for "the." Then subtract those numbers from
the total word count.
