Is it possible to alter the word art gallery options? I want to use a multi colored option but I would like to delete the shadow effect. If not, is there another way to achieve the multi colored font effect without manually changing the color for each letter?

The effects are fixed, but you can alter font, fill and perspective etc from
the word art toolbar.
Anything more adventurous and you'll need an external graphics application.

If you create it in Word Art and then use the drawing toolbar to change
shadows it may work. You'll need to display the drawing toolbar to do this.
