Word 2007 Toolbars

It seems to me that a lot of commands in Word 2007 are hidden and the ONLY
way to access them is to add them to the Quick Access Toolbar which would
make it huge!!

Is there any way to...
1 - Add commands to existing ribbons? or
2 - Create new tabs?

I thought Word 2007 was supposed to be the best thing since apple pie but I
find that it's like starting from the beginning and so far, I'm not too
thrilled about it. I find the Help section doesn't understand simple English
and when I try to find out about one thing, I'm guided to totally unrelated
functions.
