word 2007 - numbering hell

So I'm creating a user manual with nice numbered paragraphs for use in
creating a table of contents. Somehow the numbering broke and I
couldn't figure out how to resume numbering where I left off (even
with the resume option).
From that point I tried all sorts of things and ended up completely
messing up my document. So I googled microsoft word 2007 numbering
and stumbled upon this MVP document about numbering:

But.... it doesn't cover Word 2007. I got stuck at this part, I can't
find the option referred to here:

2 How to create your outline numbering
Put your cursor in a Heading 1 paragraph.

In Word 2002 and Word 2003, choose Format > Styles and Formatting.
Right-click where it says "Heading 1", then choose Modify > Format >
Numbering. (In earlier versions of Word, choose Format > Style >
Modify > Format, and choose Numbering.)

Could someone please try to get me headed back in the right direction?

Found the answer here.... now I just need to figure out how to not
number an Appendix but include it in the TOC
