Word 2007 Drop-down Form Field - "&" not displaying

Hello, I am using 2007 and have created a drop-down form field but any items
that I have added with an amphersand i.e. "&" are not displaying once the
form is protected. I can see the "&" clearly in the properties of the field
e.g. Audio & Music but in the form all I see is Audio Music.

Any ideas?

Actually, it isn't as straightforward as I thought; see Suzanne's reply for
