Windows XP updates on disc

My mother has an XP SP2 machine but is on fairly unreliable dialup which
makes it very difficult to do updates on her machine.

How can I go about putting the updates on disc so that I can take them from
my machine (fast DSL) to hers?

Go to the update site, and on the left margin click on the administrator
options. There you will find that you can view and download the updates of
choice.
