How can I record something for more than 60 seconds as
Sound Recorder only allows recording for 60 seconds. Are
there any other applications that allow recording for
longer or for unlimited time?

I had the same problem. There is no way at all that sound
recorder will allow you to record longer than 60 seconds
without recording bits at a time and using the Edit >
Insert file option (which has an unlimited time)..

Try using Nero Wave Editor. You may have to fiddle around
with the Windows recording levels in Volume Control first.

The following article describes how to increase the maximum recording
time in the Sound Recorder utility.

KB82215 - How to Increase the Maximum Recording Time in the Sound
Recorder Utility

Note: Even though Windows XP is not listed as one of the products
that the article applies to, the procedure works the same.

Where can you get Nero Wave Editor from?
