If I reply to a message and then delete the original, it is filed in the
Delete folder under my name rather than the original sender, which is what I
want. Can anyone help?

Not sure I understand the problem.
If you delete a received message, it goes in the Deleted Items folder,
where by default the first column header is 'From'.
Is that not what you want? Column headers can be customized by
right-clicking on any column header.
