Will a asus a8v mobo handle a 939 athlon 64 3000?

I'm building a 64bit pc and didn't find any info on the subject.

And are there any athlon 3000 Venice core?

The "CG" chips are Venices, but the E4 and E6 versions may be too. Some of
them require BIOS updates to be recognized properly. If you want an A8V
Deluxe mainboard instead, there's a similar compatibility list available for
it.

I believe that the Socket 939 3000+ is no longer being made.

The slowest Socket 939 Venice CPU listed by Newegg at the moment is the
3200+. (Newegg lists a Socket 754 3000+ that they claim is a Venice chip,
but as it's completely incompatible with Socket 939, it is of no interest to
you if you have an A8V.) Monarch also doesn't list any Socket 939 3000+. The
3200+ is expensive enough that you might want to spend a bit more and get a
Venice 3500+ (2.2 GHz, vs. 2.0 for the 3200+), or even a San Diego 3700+
(still 2.2 GHz, but with a 1 MB L2 cache).
