I would like minimum 3 lines of a paragraph to stay together on a new page -
how do I specify that?

Word doesn't offer this level of granularity. A three-line paragraph *will*
stay together as a result of the normal widow/orphan control, which prevents
a single line from appearing alone. Beyond that, you can settle for the
default widow/orphan control, which keeps at least two lines on a page, or
use "Keep lines together," which keeps the entire paragraph as a block.
