I want the sort function to remember the last configuration I did, i.e., no
header row and to remember the columns I configured for the sort so I don't
have to re do it every time I want to sort the data on my spreadsheet.

Excel makes best guesses as to what you want to do. The trick is to make
excel guess correctly. By including blank rows or columns you can change how
Excel is interpreting your data.

Beyond that you can create a macro that knows the range you want to sort and
just run that each time.
