Where are notes and tasks stored?

I see lots of references to the fact that I have a .pst file which stores
messages, calendar, and contacts, but I want to find out where notes and
tasks are stored so i can include them in a backup run.
They seemingly must be local because I can read/write them when I'm offline...
 
They should also be in your PST or OST file along with the rest of your
data.
 
OK, but if I do an export and get to the step where I'm asked to "Select a
folder to export from", I see notes and tasks under my mailbox, not under my
personal folders. Wouldn't this indicate that they are stored in my mailbox

If your delivery location is your Exchange mailbox, then all your default
folders are in the mailbox. Why are you exporting from your Exchange
server? Your Exchange admins should be backing it up already. If you
really want to have a copy of your data in a PST, create one with
FIle>New>Outlook Data File and right-click and drag each of your folders to
it. When you're done, close it with right-click>Close. No exporting
required or desired.
 
If my notes and tasks are on the server, then I'm good; I don't need a
backup. But I didn't think they were on the server since I can read/write
them when disconnected...

You're probably using Cached Exchange Mode which keeps a local copy of the
server mailbox just so you CAN work while offline. Click Tools>E-mail
Accounts>Next, select your Exchange account and see if the "Use Cached
Exchange Mode" box is checked.
