My Application: Excel 2007 Microsoft Office system, Version 12.0.6331.5000.
Question:
1. What are the definitions of a letter's "Properties" components:
"Sent", "Received", and "Modified"?
2. Is there an equivalent of Excel-03 View/Options/Internet Headers in
E-07?
3. Is there software out there that will search my pst-file for all
letters' sent, received and read dates? (No dates come via the export
process.)

I'm not sure wht you mention Excel in an Outlook newsgroup. Assuming you
eman Outlook and not Excel, the Sent date is the date and time when you
press the Send button when sending a message. The Received date is the time
and date when Outlook (or sometimes the mail server) received the message.
The Modified date is the time and date when you make a change to a item.
2. Is there an equivalent of Excel-03 View/Options/Internet Headers in
E-07?

Right-click a message and choose "Message Options" or open a message and
click the small dot next to the work "Options" in the Options chunk of the
ribbon.
3. Is there software out there that will search my pst-file for all
letters' sent, received and read dates? (No dates come via the export
process.)

Windows Desktop Search or Outlook's Advanced Find should do what you want.
