What happens when the Clipboard is full and I try to copy?

Simple. It won't copy until you empty the clipboard.

Assuming you mean the Office clipboard, the least recently used entry should
be automatically deleted to make space.
 
The oldest item drops off and the new item is copied. Word 2000 adds
12 items to the clipboard; later versions add 24 items. If you need
more than the allotted items, you may want to look into using the
Spike feature instead.
