Good morning.

Urmas, that is a very festive video for getting Christmas Eve off to a good start. After playing it, another caption caught my eye... "Lye-soaked fish and other Finnish Odities" so naturally, I had to read it.

So white fish is soaked in sodium hydroxide otherwise known as caustic soda....really...? Wow! You guys like to live on the edge, although I guess this is similar to other methods of "cooking with acids" (such as lemon juice, or vinegar, etc.,) that some of us are more familiar with.

So, what does it taste like, have you tried it?

I guess my answer is a bit of an anti-climax: its taste is very mild. The sauce is "the idea" of lutefisk, taste wise. Mind you, most folks buy it "pre-soaked" (and packaged) these days... just boil it, and that's it.
