For some reason when I am writing an e-mail message or replying or forwarding
etc, all the invisible symbols that dictate a paragraph, tab or space have
appeared and I don't know how to get rid of them. I've been looking for
months, I'm sure it's something really simple I'm missing and it's driving me
crazy.

Press Ctrl+Shift+8 (top row... not number pad) to toggle them off/on. As
distracting as they are to some, to many of us, they're handy aids in
letting us know where every space, paragraph mark, and tab is lurking.
Without them, some oddities in documents would be hard to figure out. But,
it's nice to know they're easy to toggle off when they get in the way of
seeing what's written.

Yes, it is really simple. Click the ¶ button on the toolbar, or press the
Ctrl+* shortcut, or open the Options dialog and uncheck the boxes for
displaying nonprinting characters. Read
http://www.word.mvps.org/FAQs/Formatting/NonPrintChars.htm for explanations.
